I think I finally managed to suss out the sizzle at rock but mostly heavy metal gigs. It’s probably the ride cymbal.

It has some very high frequency components and quite a long ringing time, so when it is hit hard and fast enough the sound won’t have the time to die out so it will become a constant sizzle.
